Vinification Process
Harvest grapes by hand or machine. Crushing/Pressing. The skin of the grapes is broken to release the sugary juices, exposing them to the yeasts for fermentation. Fermentation, the conversion of the grapes' stored sugars into alcohol and carbon dioxide. Carried out by yeasts. Maturing: wine left to mature in barrels before being bottled.
